I've always had a love affair with blueberries.....and now since you can buy organic and a HUGE amount at Costco....I enjoy them even more.
Here is an easy summer recipe for Blueberry Clafouti... a simple dessert to keep on hand anytime.....
Preheat oven to 350 degrees
1 1/2 pints blueberries washed and drained
4 eggs
1 cup sugar
1cup milk (lowfat is fine)
1 tsp. vanilla
3/4 cup of flour
3/4 cup of flour
pinch salt
powdered sugar
Spread blueberries in an 8X10 pan
crack eggs in bowl and wisk
add sugar and wisk till pale yellow
add milk and vanilla...wisk gently
add flour...wisk again
add salt
Pour mixture over blueberries
bake about 45 minutes or until center is not soft to touch
Cool before cutting and spread with powdered sugar before serving.

I have never heard of clafouti but I love blueberries so I will definitely try this.

funny :D, my housemate bought 3 peaches because I asked him if he knew about peach cobblers and I said I wanted to have one. Well, we're having major storms here and there's nothing I'd like more than a peach cobbler right about now, but recipes bug me and I don't want to put the stove on in hot florida...so this morning I imagined a way to make it the way I made my Cointreau Berries stovetop, and simply google a recipe for a stove top crumble! lol then mix and eat...so I'm off to do that now before I forget lol...

Sounds yummy! We can only get frozen blueberries here but I use them quite often for blueberry muffins, on cereal or in oatmeal. The clafouti sounds good. I heard that it should be eaten right away rather than stored in the fridge. Is that true? Of course, it is really good there may not be any leftovers so it wouldn't be a problem. :) Best wishes, Tammy

However, strawberries have never been my favorite.
